(Masanobu Fukuoka era
un agronomo pioniere e un contadino filosofo giapponese che rivoluzionò alcuni
sistemi agricoli. Le tecniche che proponeva e sperimentava permettevano un
maggior rispetto del suolo e un minor dispendio di risorse energetiche per
lavorare la terra.)
L’idea che abbiamo
presentato si chiama Può Auletta auto-nutrirsi?
poiché attraverso il
processo di riqualificazione del Parco a Ruderi, quello che vorremmo proporre è
un modello economico e un’occasione professionale per
le generazioni future, a partire dalle risorse intrinseche del
territorio stesso, con un dispendio il più limitato possibile di energie.
La prima risorsa che
ha un territorio è la sua terra.
Il cardine della
nostra proposta è realizzare all’interno dei locali del Parco una scuola
a specializzazione agraria, al fine di preparare una classe di
lavoro competente rispetto ad una prospettiva di lavoro sostenibile
sul territorio. L’utilizzo degli spazi del parco ha due vantaggi di ordine
pratico: il primo è nel disporre di una struttura esistente, con notevole
risparmio di mezzi; il secondo è nel poter garantire ad una quota di studenti
ed insegnanti fuori sede un alloggio temporaneo, grazie al progetto di “albergo
diffuso” tutt’ora in fase di completamento, magari a tariffe agevolate.
In continuità con
l’albergo diffuso abbiamo chiamato la scuola “diffusa”. Le lezioni
avverranno tra i locali “diffusi” del parco, alla maniera, potremmo dire, di un
piccolo campus universitario. Vi è poi una parte pratica, organizzata in
tirocini formativi all’interno delle aziende agricole che si
rendono disponibili nel territorio.
La collaborazione
scuola – aziende deve portare avanti un preciso programma di
valorizzazione delle tipicità e creare una filiera agricola produttore-consumatore,
ovvero, un mercato a km 0.
Oltre all’aspetto
dell’istruzione e della filiera agricola, il nostro progetto ha un terzo
obiettivo: la scuola, insieme alla fondazione Mida ed alle altre associazioni
sul territorio dovrebbe attuare un programma di coordinamento al fine di
inserire Auletta in una visione più ampia che, nel tempo, contribuisca a
modificare lo stile di vita del singolo e della comunità. Il progetto in
questione è Auletta come Transition Town .
Le città in
transizione fanno parte del Movimento di Transizione; una rete di comunità
nata nell’Inghilterra del sud-ovest, che si sta impegnando ad aumentare
la resilienza in risposta ai cambiamenti climatici e ad
una futura fine della risorsa petrolio. Indipendentemente dalle facili
retoriche ecologiste, è un dato di fatto che il petrolio sia un capitale che ha
una fine. La resilienza è la capacità di sapersela cavare anche in situazioni di crisi,
come in una situazione post-sisma o appunto in condizioni di carenza di una
risorsa importante come il petrolio, da cui ancora dipende praticamente
tutto. Vi sono molti casi di città in transizione. In Italia c’è Monteveglio, in provincia di
Bologna, già ospite della trasmissione Report come caso pilota
italiano. Tutto nasce da un piccolo gruppo di abitanti e si diffonde
letteralmente strada per strada, con gruppi che collaborano per esempio
all’acquisto di impianti
fotovoltaici, diminuendone notevolmente il costo.
Auletta in questo modo
potrebbe diventare non semplicemente una città in transizione, ma un caso che
spicca su tutti gli altri poiché strutturato con una scuola agraria
specializzata come base della piramide!
La scuola che
intendiamo noi dovrebbe insegnare a curare la terra, a migliorarne la fertilità
e a sperimentare nuove tecniche per una efficiente conduzione naturale.
Una scuola che insegni i mestieri dimenticati, che in una ottica di
agricoltura naturale tornano ad essere più che una semplice rievocazione, ma
bensì una necessità poiché l’agricoltura naturale prevede il riutilizzo di
macchinari semplici, duraturi e facilmente riparabili con il lavoro di un
piccolo artigiano.
Il ruolo delle aziende
agricole come già detto è quello di ospitare i tirocinanti della scuola. La
loro partecipazione dovrebbe essere ovviamente volontaria, ma si deve tener
conto di alcuni vantaggi che se ne trarrebbero:
- manodopera
specializzata a basso costo
- ingresso
in un circuito di informazione tecnica
- utili
insegnamenti e nuovi metodi di lavoro
- visibilità
Il lavoro presso le aziende è un rapporto mutualistico e non si
riduce al solo tirocinio sui campi sperimentali messi a disposizione, ma si
estende anche alla produzione concreta di alimenti.
In tutto questo
la produzione degli alimenti tipici locali dovrebbe ovviamente
avere un ruolo più importante, ma ancor più la ricerca della qualità di
questi prodotti, aspetto già molto a cuore qui.
Inoltre si potrebbe
lavorare all’estensione
del numero di queste tipicità, cercando ad esempio dei metodi per coltivare
in maniera innovativa dei prodotti nuovi (altri link: Parco
3A-PTA, Comunità
Montana Alburni, Congresso
Biodiversità, tavola rotonda a Rofrano, zafferano). Questi
alimenti, freschi o trasformati che sia, devono finire sulle tavole degli
abitanti di Auletta su quelle degli studenti, sui banchi di un mercato
contadino che si svolgerà alle porte del parco, ad esempio 2 volte
alla settimana; e poi nelle cucine della ristorazione locale.
Il terzo aspetto da curare è proprio questo:
la ristorazione, la
degustazione dei prodotti, il confronto con quelli di altri territori, la
valorizzazione quindi di uno SlowTurismo, con tutto quello che ne
consegue: un caso italiano di filiera corta che abbia come collante una scuola
potrebbe richiamare turismo e interesse dei media.
La scuola crea una
serie di collegamenti: con il centro storico, con le campagne, con
la fondazione Mida; quest'ultimo è fondamentale come guida e supporto alle
attività della scuola, in virtù di un programma pedagogico di
valorizzazione del territorio. Questo legame genera una molteplicità di altri
collegamenti, la cui complessità corrisponde alla vita di un paese.
Il primo collegamento da noi studiato è scuola-centro
storico: la presenza della scuola in prossimità del centro ha un
effetto economico immediato: la presenza durante l'anno di studenti,
insegnanti, personale scolastico,.. imporrà all'economia del centro la
fornitura di servizi ad oggi inesistenti. Questo riguarderà da una parte i
privati, poiché l'aumento della domanda provocherà un incentivo
all'imprenditoria (ad esempio con l'apertura di nuovi negozi), dall'altra il
pubblico, che ad un aumento della popolazione dovrà rispondere con
un miglioramento dei servizi, nei termini di ridefinizione dei luoghi di
aggregazione (strade e piazze), illuminazione pubblica, arredo urbano, etc.
Il secondo
collegamento è scuola-aziende agricole: come già detto la
scuola organizza tirocini formativi obbligatori per gli studenti iscritti
all'interno delle aziende agricole disponibili sul territorio. E' un
rapporto do ut des: da una parte i ragazzi fanno formazione
sul campo, dall'altra gli agricoltori ricevono un costante aggiornamento
tecnologico insieme a manodopera pre-specializzata a basso costo. Le
conseguenze principali di questa collaborazione sono: la valorizzazione dei
prodotti locali e la creazione di una filiera agricola con un mercato a km0. Il
luogo da noi scelto per il mercato è Piazzale Giallorenzo, a memoria di antico
luoghi di scambi ed incontri all'interno di Auletta.
Abbiamo cercato di
creare all'interno del Parco a Ruderi una logica distributiva delle funzioni
legate alla scuola, tenendo conto del progetto già avviato dall'amministrazione
comunale di Albergo diffuso: il “comparto 3”, già sede di progetto delle
suites d'albergo è rimasto tale; Dunque abbiamo pensato di collocare le aule
scolastiche e i servizi annessi nei comparti rimanenti; in particolare il
nucleo delle aule è disposto nel comparto 5; i laboratori e la biblioteca tra
le aule e le suites; il comparto 2, caratterizzato dalle case “scoperchiate”, è
occupato in parte dalla zona ristoro con terrazza all'aperto, in parte dagli
orti didattici a disposizione sia della scuola che e delle attività pedagogiche
della fondazione Mida. Infine la presidenza e la segreteria sono nel
comparto 1, in posizione più indipendente ed accessibile dalla strada
principale.
Le aule hanno dimensioni ridotte, circa 22-23
mq per aula, con un massimo di 8-10 alunni.
Grazie alla vicinanza
scuola diffusa-albergo diffuso è possibile fare una convenzione tra le due
strutture a favore di studenti ed insegnanti fuori sede, ai quali verrà
proposto un affitto agevolato nelle suites. A tal proposito proponiamo due
tipologie di alloggio:
- la prima più “privata” dotata di uno o due
posti letto con servizi (bagno e cucina) personali;
- la seconda con cucina e soggiorno
collettivi.
Il progetto scuola, se
realizzato, dovrebbe portare ad un'affluenza continuativa durante l'anno di
soggetti operanti all'interno del Parco a ruderi-Centro storico. Ipotizziamo
dunque una curva stabile nei periodi da settembre a giugno/luglio (il periodo
scolastico) ed una inflessione della curva nel periodo estivo (il periodo delle
vacanze).
Ora, una parentesi
sulle materie di cui si dovrebbe occupare la scuola.
In primis abbiamo
detto l’agricoltura naturale. Per essere naturale bisogna
innanzitutto che si curi della terra in maniera da arricchirla anziché
impoverirla. L’agricoltura convenzionale da risultati ottimi in poco tempo,
permette la produzione di grandi quantità; ma sfrutta la terra, la impoverisce
sempre di più costringendo l’agricoltore a intense lavorazioni e concimazioni
per mantenere un certo standard quantitativo.
Nello scorso ottobre
c’è stata in Corea del Sud la decima sessione della Convenzione
delle Nazioni Unite per il contrasto alla desertificazione. Ad oggi si considera
che a causa dell’agricoltura dei concimi chimici, dei diserbanti, dei veleni e
delle arature frequenti, ogni anno 12 milioni di ettari perdano la loro
fertilità, cioè la quasi irreversibile possibilità di essere abitati da
vegetali. Secondo le statistiche sull’Italia, in Campania i terreni a rischio
di desertificazione sono circa il 40%. Una percentuale che fa preoccupare.
Si trovano già in
commercio i prodotti da agricoltura biologica. Più difficilmente quelli
da agricoltura
biodinamica. Trattasi in poche parole e un metodo di conduzione ideato dal
filosofo Rudolf Steiner (il quale si è occupato largamente anche di pedagogia
infantile) che prevede l’utilizzo di pratiche come il sovescio; i trattamenti
con letame invecchiato in corna di bovini, polveri minerali e sostanze
vegetali; insieme ad una attenzione particolare al calendario ed
alla posizione della luna e degli astri. (Sappiamo tutti del controllo della
luna sull’acqua dal fenomeno delle maree, ma basta potare una vite in luna
crescente o calante che vediamo la differenza nel gocciolamento della pianta.
Da noi si dice che piange).
L’agricoltura
biodinamica ha un’esperienza di 80 anni, anche in Italia. Ciò che non è ancora
molto sperimentato in Italia è la Permacultura, molto presente
invece ad esempio in Australia e Inghilterra. E noi pensiamo che dovrebbe
essere approfondita. Si tratta di un metodo di progettazione che imita la
natura cioè punta a creare un sistema permanente e auto-funzionante con la
minor spesa di energie possibili, anche energie umane, quindi lavoro (e qui
torniamo a Fukuoka). L’azienda agricola diventa “fattoria” cioè vero e
proprio piccolo mondo che funziona e che produce più cose possibili, piuttosto
in piccole quantità: per l’auto-sostentamento della fattoria stessa e per la
condivisione delle eccedenze con gli altri abitanti, inserendoli ad esempio
nella filiera mercato-ristorazione.
In permacultura si
analizzano tutti gli elementi della propria fattoria (galline,
maiali, frutteto, …) per fare un bilancio tra ciò di cui hanno bisogno e ciò
che possono procurare (caratteristiche intrinseche). E allora, metteremo la
serra vicina al pollaio perché le galline generano calore, metteremo i maiali
al pascolo su una terra che ha bisogno di essere lavorata, lasceremo le oche
nel frutteto libere di tagliarci l’erba, e così via.
Altre materie che suggeriamo
di inserire nel percorso formativo sono:
- orticoltura sinergica, riassumibile in:
· copertura
permanente del suolo (con paglia);
· non
zappare/non concimare/usare fiori;
· consociare
3 gruppi di piante (leguminose, liliacee, restanti);
· nel
progettare usare patterns che imitano forme naturali;
- la
lavorazione dei campi con gli animali (che presenta vantaggi
incredibili);
- le possibilità della
grande risorsa
rafano (ad
esempio come biocida naturale, veleno per patogeni delle piante orticole o come
pianta miglioratrice della struttura del suolo, causa il suo esteso apparato
radicale, come concime verde..), Varrebbe la pena sperimentare la rotazione
della bietola, che sembra dare risultati eccellenti;
- prove in campo dei
prodotti derivati dal progetto Tirsav Plus (che trasforma i
reflui oleari in ammendante biologico) (un progetto dell’Ente parco nazionale
del Cilento e Vallo di Diano, cofinanziato dal ministero dell’ambiente); con
una eventuale collaborazione per attività formative, analisi in campo e
diffusione del know-how;
- sperimentare nuove tecniche di vivaismo e
orticoltura (prendendo spunto da esperienze estere, moderne e antiche
allo stesso tempo, come quella di Eliot
Coleman e
la sua “Four Season Farm” dove coltiva sotto
serre mobili in rotazione su 2 ettari e ha creato un piccolo business
locale).
E ancora:
- ricerca di
abbinamenti gastronomici per integrare ad esempio l’evento della sagra del
carciofo di Pertosa oltre ad una possibile collaborazione con la scuola
di chef ALMA di Colorno (PR);
- gruppi di studio per
individuare metodi di sensibilizzazione e comunicazione delle proprietà del
carciofo, alimento dalle grandi qualità ancora poco note;
- attività di contatto
con realtà internazionali per instaurare dei gemellaggi di valore sociale;
- web marketing
applicato alla nuova imprenditoria agricola.
Nel titolo della
nostra idea parliamo di auto-nutrirsi. Il nutrimento che serve, noi
lo vediamo su tre livelli:
· nutrire
la terra,
· nutrire
l’uomo,
· nutrire
lo spirito.
O in altre parole:
· coltivare;
· lavorare
e quindi produrre;
· gustare
dei prodotti più saporiti e aumentare la qualità della vita.
Ora possiamo fare
il collegamento:
- la scuola
deve nutrire la terra: avere come obiettivo di studio la ricerca della
fertilità e qualità della terra di Auletta;
- i prodotti
devono nutrire l’uomo;
- la
degustazione, la ristorazione nutrono lo spirito, ovvero aumentano
la cultura alimentare e la sensibilità all’importanza della tipicità
di un prodotto.
Crediamo che per fare questo potrebbe essere
utile dare una continuità, un’identità unica a questa rete, con un’associazione
per esempio, o una società comunale, oppure come grande progetto della
Fondazione Mida. Un’entità comunque che raccolga la scuola, le aziende
agricole, il mercato, i ristoranti e magari le botteghe artigiane che pian
piano potrebbero riaprire. Noi pensiamo che la parola che più rende giustizia a
tutto questo sia TERROIR. Il terroir è un
termine francese usato
in campo di vini. E’ una parola intraducibile che, mettendo insieme le
caratteristiche chimiche e fisiche di un suolo, descrive fondamentalmente il
gusto della terra in cui quell’uva è cresciuta e la sensibilità dell’uomo che
l’ha curata, trasformata e degustata.
Non a caso, Manuel Valenzuela, un illustre
produttore spagnolo che ho conosciuto ad una recente manifestazione di vini
naturali, assaggiando un vino ha sostenuto di non poterlo capire senza vedere
qualche immagine del vigneto che lo ha prodotto, qualche foto della luce, del
colore della terra e il viso dello stesso vigneron.
Per non dire che per
degustare appieno una tipicità di gusto è consigliabile trovarsi sul luogo di
produzione! Concetto su cui si investe a nostro avviso troppo poco e che
alimenterebbe lo slow tourism di cui Auletta sarebbe
magnifica meta.
Perché allora non
ricercare il terroir in ogni prodotto della terra di Auletta?
Ricercare l’esaltazione della tipicità. E magari creare eventi di
degustazione mirati a dimostrare l’esistenza di una differenza, di
un bilancio del gusto. Magari con una campagna che si basa sui 3
livelli di nutrimento: della terra, dell’uomo e dello spirito. E
magari ospitando altre realtà locali con i loro prodotti e con la stessa
attenzione per la qualità: un occasione per l’agricoltura di Auletta di
crescere condividendo esperienze.
In conclusione, la
prima domanda che ci siamo poste è stata: cosa fa restare i giovani nel luogo
in cui sono nati?
Al di là di tutti i
concorsi e al di là dei progetti possibili, quello che serve è un cambiamento
mentale. Una diversa consapevolezza delle potenzialità del proprio
territorio. Una presa di coscienza. Per noi l’istruzione è il motore del
cambiamento mentale. La risorsa principe di un luogo è la vita stessa: chi
vive, come vive e come mantiene viva la piazza del suo paese. E sarà banale ma
la vita parte dalla terra. Un sistema che funzioni parte dalla terra. Ci
rendiamo conto che questa proposta può sembrare complicata da un punto di vista
gestionale. Ma noi crediamo che questo sistema, una volta avviato possa essere
portato avanti dai cittadini di Auletta stessi, come attori principali di
questo cambiamento. Se questo si realizzasse sarebbe, in buona sostanza, una
concretizzazione del concetto di “sostenibilità”.
Il tutto è più della
somma delle parti.

"The human being as close to God is a farmer" (Masanobu
Fukuoka).
(Masanobu Fukuoka was a pioneer agriculturist and a Japanese philosopher
farmer who revolutionized some agricultural systems. Proposed and
experimented with techniques that allow for a greater respect for the soil and
less waste of energy resources to work the land.)
The idea that we have presented is called “Can Auletta feed itself?”
because through the process of upgrading the Parco a Ruderi, what we would
propose is an economic model and professional
opportunity for future generations, starting from the intrinsic
resources of the Territory, with an expenditure of energy as small as possible.
The first resource of a territory is its land.
The cornerstone of our proposal is to provide within the park a school specializing in agricultural in
order to prepare a competent working class compared to a perspective of
sustainable employment in the territory. The use of space in the park has two
practical advantages: first, in having an existing structure, thus saving
resources and the second is in order to ensure a share of students and teachers
off-site temporary housing, perhaps at discounted rates.
In continuity with the “albergo diffuso”, we
called the school " diffusa" (widespread school). The
lessons will take place between the local "spread"
in the park, like a small university campus. Then there
is a practical, organized internships on farms that become
available in the territory.
The collaboration school - farms must carry
out a specific program of improvement for
typical products and create an agricultural chain made
by producer-consumer, ie, a market km 0.
Besides the education and agricultural supply chain, our
project has a third objective: the school, along with
the Mida Foundation and other organizations in the
area should implement a coordinating program to
include Auletta in a broader vision over time, help to
change the lifestyle of the individual and the community. The
project in question is how to turn Auletta in a Transition Town.
Transition Towns are part of the Transition Movement,
a network of community born in England in the south-west,
which is working to increase resilience in response to climate change and a
future end of the resource oil. Regardless of easy rhetoric ecologist, is
a fact that oil is a capital that has an end. Resilience is the ability to withstand even in situations of crisis, as in a
post-earthquake conditions, or in fact a shortage of important resources such
as oil, which still almost anything depends. There are many cases of Transition
Towns. In Italy there is Monteveglio, in the province of Bologna, former host of the show “ Report” as pilote case in Italy.It all starts with a small group of people and
spreads literally street by street, with groups working together for example
the purchase of photovoltaic systems, greatly decreasing the cost.
Auletta in this way could become not only a transition town, but a case
that stands out above all others because structured with a specialized
agricultural school as the base of the pyramid!
Our school should teach how to care for the land, improve
its fertility and to experiment with new techniques to
an efficient natural management. A school that
teaches the forgotten trades, in
a perspective that natural farming is again
becoming more than just a re-enactment, but rather a
necessity, as agriculture provides a
natural reuse of simple machines, durable and easily
repairable with the work of a small craftsman.
The role of farms as mentioned above is to host
the trainees of the school. Their participation should
be voluntary, of course, but you must take
into account some of the advantages that it would:
- low-cost skilled labor
- entry into a circuit of technical information
- lessons from it and new ways of workin
- visibility
Work in farms is
a mutual relationship and can not be the only internship in
experimental fields available, but also
extends to the actual production of food. In all
this, local food production should of course have
a main role, but more research of the quality of
these products, which has already been taken very
seriously here.
Also you could work the extension of the number of these
typicals, such
as looking for ways to grow in an innovative new
products (other links: Parco 3A-PTA, Comunità Montana Alburni, Congress about Biodiversity, panel discussion in Rofrano, saffron). These foods, whether fresh
or processed, should end up on the tables of the
inhabitants of Auletta, of students, on the banks of
a farmers' market will take place at the gates of
the park, for example, 2 times a week, and then in the
kitchens of local restaurants.
The third aspect to take care of is just this: the restaurants, tasting the products, the comparison with
other territories, then the value of a Slow Tourism, with
everything that goes with it: an Italian case of short
chain which has a school as base of a pyramid could bring tourism
and media interest.
The school creates a series of links: with the old town
centre, with the countryside and with Mida's foundation; Mida's activities are
vital to guide and support the activities of the school, thanks to an
educational program that promotes the area. This link generates a variety of
other connections, which are structured depending of the life of a village.
The first link we have examined, is school-old town centre: the location
of the school leads to an immediate economical effect: the presence during the
year of students, teachers, school staff,.. will force the local economy to
improve the delivery of services that may not be present at the moment. This
will involve both private citizens (eg by opening new stores), and government,
as the increase of the population will carry an improvement in services, in
terms of redefining the gathering places (streets and squares), public
lighting, street furniture, etc..
The second link is school-farm: the school organizes trainings which
will be mandatory for students on farms located in the territory. It's a “do ut
des” relationship: the kids do the training job; on the other side, farmers
receive constantly updated technology with pre-specialized labor at low cost.
The main consequences of this collaboration are the promotion of local products
and the creation of an agricultural sector with a km0 market. The place we
chose for the market is Giallorenzo
Square , in memory of former places of meetings and
exchanges within Auletta.
We tried to create within the ruins park a logical distribution of the
school functions, considering the ongoing project about the popular hotel: we
are not changing "sector 3", because already in the design of the
hotel suites; we decided to place the classrooms and related services in the
remaining sectors, in particular classrooms are designed into compartment 5 ,
laboratories and library between classrooms and suites; the sector 2,
characterized by "roofless " houses, is occupied by the dining area
with the outdoor terrace, and by the teaching gardens available to both school
and the educational activities of Mida's foundation. Finally, the
headmaster's office and the secretariat is in sector 1, more independent and
accessible from the main road.
The classrooms are small, about 22-23 square meters per classroom,
with a maximum of 8-10 students.
Thanks to the nearby school - hotel you can make an agreement between
the two facilities for students and teachers away on business, which will be
offered a subsidized rent in the suites. We propose two types of accommodation:
- the first one is more "private" with one or two beds with
private bathroom and kitchen;
- the second one with shared kitchen and living room.
The school project, if implemented, should lead to continuous year-round
turnout of people working in the Park-Old Town in
ruins. So we assume a stable curve in periods from September to June / July
(school time) and an inflection of the curve during the summer (vacation time).
Now, a bracket on the subjects which should occupy
the school.
First we said natural agriculture. To be
natural we must first heal the soil so as to enrich
rather than impoverish
it. The excellent results of conventional
agriculture in a short time, allows the production of large quantities,
but uses the soil, makes it poor, forces the farmer
to work and fertilize to maintain a certain
standard amount.
In last October there has been in South Korea the
tenth session of the UN Convention to
combat desertification.
At present it is considered that due
to agricultural chemical fertilizers, herbicides,
poisons and frequent plowing, every year
12 million hectares lose their fertility, that is the
almost irreversible possibility to be inhabited
by plants. According to statistics on Italy , in Campania land at
risk of desertification are about 40%. A percentage
who worry about.
We are already marketing the organic products. Less
easier to find are those from biodynamic agriculture. This is basically a management
method designed by the philosopher Rudolf
Steiner (who has also dealt extensively in
pedagogy child) which includes the use of practices such
as green manure, the treatments with
manure aged horns of cattle, mineral dust and vegetable
matter, along with a careful particularly the
timing and location of the moon and stars. (We all
know the moon controls the tides on the
water, but it would be enough to prune a vine in
growing or waning moon that we see the
difference in the dropping of the plant. We

Biodynamic agriculture has an experience of 80
years, even in Italy .
What is not yet very experienced in Italy is the Permaculture, but very present for example in Australia and England . And
we think that should be investigated. This is a design method that mimics
nature that aims to create a permanent and self-operating with the least
possible expenditure of energy, even human energies, then work (and here we go
back to Fukuoka). The farm becomes an old style farm that
is, real little world that works and produces as much as possible, also in
small quantities:
for self-sustenance of the same farm and sharing the surplus with other
people, such as inserting them into the chain-restaurant market.
In permaculture we analyze all the elements of his farm
(chickens, pigs, fruit trees, ...) to take stock of what they need and what
they can provide (intrinsic characteristics). And then, put the greenhouse
near the chicken house because the chickens generate heat, put the pigs grazing
on land that needs to be digged, we will keep the geese in the orchard grass to
cut us free, and so on (other links: Genitron Sviluppo, Permaculture essence, Introduction to permaculture)
Other subjects we suggest entering the training
program are:
- synergistic gardening, more or less summed up in:
• permanent covering of soil (straw);
• no dig / no fertilizing / using flowers;
• companion planting 3 groups of
plants (legumes, lilies, remaining);
• use the design patterns that mimic natural
forms.
- Working of the fields with
animals (which
has incredible benefits);
- The possibility of horseradish great resource (such as
a natural biocide, poison plant pathogens; plant
that improves the soil structure, due to its extensive root
system; as green manure ..), would be worth testing the
rotation of chard, which seems to give excellent results;
- Field trials of the products derived from the
project Life Tirsav Plus (which
transforms the waste from oil
production in organic soil amendment) (a project of
the National Park of Cilento and Vallo
di Diano, co-funded by Italian Ministry of
Environment), with a possible collaboration to educational
activities, field analysis and dissemination of know-how;
- Experiment with new techniques of plant
cultivation and horticulture (drawing
inspiration from foreign
experience, ancient and modern at the same time
as that of Eliot Coleman and his "Four Season Farm"
where He grows under mobile greenhouses in rotation on 2
acres and created a small local businesses).
And yet:
- Looking for food combinations to integrate events such
the Pertosa’s white artichoke festival in addition to
a possible collaboration with the school for
chef ALMA at Colorno (PR-Italy);
- Study groups to identify ways of raising and
communicating properties of the artichoke,
great quality food still little known;
- Activities of contact with international
companies to establish twinnings of social value;
- Web marketing applied to the
new agricultural entrepreneurship.
In the title of our idea we talk about self-feeding. We
see the nourishment we need on three levels:
• nourish the soil,
• nourish man,
• nourish the spirit.
Or in other words:
• cultivate;
• work and produce;
• taste of more flavorful products and increase the
quality of life.
Now we can make the connection:
- The school must nourish the soil: have as goal of
study the research of fertility and Auletta’s soil quality;
- The products should nourish man;
- Tasting, restaurants nourish the spirit,
or increase the food culture and sensitivity to the
importance of the typicality of a product.
We believe that to do this might be useful to give a continuity, a
unique identity to this network, with an association for example, or a communal
society, or as a major project of the Foundation Mida. However, must be an
entity that collects the school, farms, markets, restaurants, craft shops that
maybe could reopen gradually. We think that the word that does justice to all
this is TERROIR. The terroir is a
French term used in the world of wines. It 'a word which is untranslatable, combining chemical and
physical characteristics of a soil, essentially describes the taste of the land
where those grapes are grown and sensitivity of the man who has cured,
processed and tasted. Not surprisingly, Manuel Valenzuela, a famous Spanish
producer who I met at a recent event of natural wine, tasting claimed not to
understand it without seeing some pictures of the vineyard that produced it,
some pictures of the light, the color of land and face the same vigneron. Not to say that for
a right tasting you should be on the place of production! Concept on which
we invest, in our opinion, too little and that would power the slow tourism which would
see Auletta as magnificent goal.
So why not find the terroir in any product of Auletta? Search the
exaltation of typicality. And maybe create tasting events aimed at
demonstrating the existence of a difference, a balance of taste. Maybe
with a campaign that is based on the 3 levels of nutrition: the soil, man and
spirit. And maybe hosting other local realities with their products and
with the same attention to quality: an opportunity for Auletta’s agriculture to
grow by sharing experiences.
In conclusion, the first question
we asked was: what does the young remain in the
place they were born? Beyond all the competitions and the
possible projects, what is needed is a change of
mind. A different understanding of the potential of this
territory. Awareness. For us education is the engine of
change of mind. The very resource of a placeis life itself:
who lives, how they live and how to keep alive
the square of his town. Will be trivial but
life starts from soil. A system that works from starts
from soil. We realize that this proposal may seem complicated
with a management point of view. But we believe that
this system, once started, can be taken forward by the
citizens of Auletta themselves as main actors of
this change. If this were achieved it would, in
essence, an implementation of the concept of
"sustainability".
The whole is greater than the sum of the parts.
